The Classic Mojito
It’s referred to as a classic for good reason – the classic mojito is one of the most iconic cocktails ever made. It’s Cuban, refreshing, and comes with the perfect balance of lime, rum, and fresh mint, making it ideal for summer creations when your herbs are booming in the garden.
This mojito recipe is spot on, being less sweet and more flavourful than the ones you’ll find in bars and pre-mixes. Sip away on the patio or by the beach, this is the summer drink to drink.
- 6 mint leaves with extra for garnish
- 2 tablespoons of lime juice
- 2 tablespoons of syrup
- 4 tablespoons of white rum
- ½ cup of soda water
In a cocktail shaker, muddle the mint by gently mashing the herbs to release its juices. Do so by placing the mint leaves at the bottom of the cocktail shaker and use a wooden cocktail muddler or unfinished wooden spoon to gently mash the mint a few times. The trick is to be gentle without using too much force.
Add in the lime juice, syrup and rum then fill the cocktail shaker with ice and shake until cold. Place ice into a glass and strain in the liquid followed by topping the glass with soda water. For presentation, garnish with more mint leaves.

To make a great Aperol spritz, you’ll simply need to follow a 3-2-1 ratio formula of sparkling wine such as champagne or Prosecco, Aperol and soda water.
- 4 tablespoons of Aperol
- 6 tablespoons of sparkling wine
- 2 tablespoons of soda water
- An orange wedge for garnishing
Stir in the aperol to a glass filled with ice and top it with sparkling wine and soda water. Squeeze in the orange wedge and stir gently, then serve. To minimise dilution, serve with a straw.
Classic Piña Colada
The perfect blend of pineapple, lime, coconut and rum, the piña colada is sophisticated even though it only takes 5 ingredients plus ice to make it.
Created in Puerto Rico, this classic cocktail has become an instant favourite worldwide for good reason – it's absolutely delicious, works as a thirst quencher, and gives you the ultimate tropical vibes you need for summer.
- 1 ½ cups of frozen pineapple
- 1 ½ cups of ice
- ½ cup and 2 tablespoons of rum
- 4 tablespoons of cream of coconut
- ½ cup pineapple juice
- 2 tablespoons of lime juice
- Cocktail cherry for garnish
Blend the pineapple and ice until it’s chunky then add the remaining ingredients and blend until smooth. Garnish your drink with cocktail cherries if you like and drink umbrellas for the ultimate tropical summer vibes.

The classic margarita works perfectly when served as a summer cocktail. It’s also simple to make with a rewarding finishing product that will easily make this drink your new summer favourite.
- 3 tablespoons of tequila
- 2 tablespoons Cointreau
- 1 ½ tablespoons of fresh lime juice
- Kosher salt or flaky sea salt for the rim
- A lime wedge to garnish
Cut a notch in a lime wedge and run it around the rim of a glass to dip into a plate of salt. Put all ingredients in a cocktail shaker with 4 ice cubes and shake until cold. Strain the margarita mix into the glass and fill it with ice to serve.

- 1 cup sliced strawberries
- 1 ½ cups of vodka
- 6 tablespoons of syrup
- 6 tablespoons of unsweetened 100% cranberry juice
- Soda water for serving
- Ice for serving
- 1 handful of fresh mint leaves to garnish
Slice the lemon into rounds and thinly slice the strawberries, placing both into a pitcher with the vodka, syrup and cranberry juice. Let the mixture sit to marinate for at least 30 minutes or up to 4 hours.
